Everyday Cashew "Mayo"

  • 2 cups soaked and drained cashews soak for several hours or overnight
  • 1 scant cup of water
  • 2 tsps apple cider vinegar
  • 2 Tbsp lemon juice
  • sea salt to taste


  1. Put all ingredients in a Vitamix or high powered blender, and process until super smooth. Store in an airtight container in the fridge for up to a couple of weeks, and use as needed.
