Pannukakku (Finnish baked pancakes)

This is a vegan twist on a traditional Finnish dish. I grew up with the non-vegan version and believe this beats the original hands down.

Ingredients

  • 3/4 cup silken tofu
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 2 cups non-dairy milk such as soy
  • 1 1/4 cups all-purpose flour
  • 2 tablespoons coconut oil melted

Instructions

  1. Preheat oven to 450 degrees. Grease 9 x 13 baking sheet and set aside.
  2. Place tofu in a food processor with sugar and salt and blend until smooth.
  3. Slowly add nondairy milk while processor is running.
  4. Add all-purpose flour and blitz a few times until combined. Add coconut oil and blitz a few more times.
  5. Pour batter in the baking sheet and bake for about thirty minutes. The pancake will puff up in the oven and flatten when cooled.
