Oatmeal Raisin Cookies

Oatmeal Raisin has always been my favorite cookies. When I went vegan I had to try multiple recipes until I found just the right one. Inspired by a recipe from Angela Liddon.

Ingredients

  • 1 3/4 cups walnuts toasted
  • 2 cups regular oats divided
  • 3/4 cup spelt flour may use regular white flour
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 cup pure maple syrup
  • 2 tbsp almond milk may use other types e.g. cashew , rice, soy, etc.
  • 3 1/2 tbsp coconut oil
  • 2 tsp pure vanilla extract
  • 2/3 cup raisins

Instructions

  1. Preheat over to 350F. Place walnuts on greased baking sheet and toast for 10-12 minutes or until golden in color. Cool.
  2. Chop walnuts in a food processor until just finely ground.
  3. In a medium bowl mix flour, baking soda, 1 cup oats, cinnamon, and brown sugar. Add mixture to food processor and process until mixed.
  4. In a small microwavable bowl add coconut oil and microwave for 15 seconds to soften. In the same bowl add maple syrup, almond milk, and vanilla. Add mixture to food processor and process until thoroughly combined.
  5. Pour contents of processor into large bowl. Stir in the remaining oats. Fold in the raisins.
  6. Form 2 tbsp of dough into a ball and place on ungreased cookie sheet flattening them as they are placed.
  7. Bake for 10 minutes at 350F. Remove from oven and allow to cool for a couple of minutes before transferring to a wire rack.
  8. Makes approximately 16 cookies.
