Everyday Cashew "Mayo"
Ingredients
- 2 cups soaked and drained cashews soak for several hours or overnight
- 1 scant cup of water
- 2 tsps apple cider vinegar
- 2 Tbsp lemon juice
- sea salt to taste
Instructions

Put all ingredients in a Vitamix or high powered blender, and process until super smooth. Store in an airtight container in the fridge for up to a couple of weeks, and use as needed.
